- We'll learn how to cure our own corned beef, discussing recipes with and without nitrates, those pink curing salts. Ken Gordon, of Kenny & Zuke's Delicatessen, joins us in-studio, and food writer (and Portland native) Matthew Amster-Burton calls in from Seattle. His new Spilled Milk podcast recently addressed this topic.
- Then Marliese Franklin takes us behind-the-scenes of "The Chocolate Story" exhibit, at the World Forestry Center through April.
