He interviews James Beard award-winning Chef Dan Barber about his book THE THIRD PLATE: Field Notes on the Future of Food.  In the book. Barber argues that the sustainable food movement needs to redefine its expectation of “what’s for dinner” to better match the ecological realities of farming.  Barber, as Ruth Reichl recently noted , “asks questions that nobody else has raised about what it means to be a chef, the nature of taste, and what ‘sustainable’ really means.”
